Easy Egg Bites Recipe.

I did a quick breakfast meal prep today. I made some easy egg bites. Check out the recipe below. Add or remove any ingredients you’d like!

Ingredients:

6 Eggs

1 Potato chopped

3 Slices of bacon, chopped

1/2 Onion

Unsweetened almond milk (instead of regular milk)

Chopped spinach

Chopped green peppers

Salt, pepper and garlic powder to taste

Directions:

Pre-heat oven to 375 degrees. Cook the bacon and potatoes in a frying pan until the bacon is crispy. Add the onions and cook for a few minutes until they are translucent. Add the spinach and peppers to the mix. Add salt, pepper and garlic to taste. In the meantime, whisk the eggs in a bowl with the almond milk.

*I apologize, I never measure my ingredients. It’s just how I learned to cook, blame my mom, haha!*

Spray pam into cupcake tins. Add the potato mixture evenly into the cupcake tins. Then add the egg mix to the tins. Bake for 25 minutes and enjoy!

This recipe made 8 egg bite muffins. If you want more, add more eggs! Let me know if you try it / what you think!
