A good friend of mine gave me this idea to make a crustless quiche. This is the first time I’ve ever made a quiche and it came out really good! I normally eat the same things every day, so this was a nice change for me.

One of the things I love about this quiche is that it tastes good when you re-heat it in the microwave. I’m also probably going to have this as a snack during the day. Feel free to add any vegetables, cheese, herbs, etc. that you like to this.
